Iberian Pig craft production

Rural areas have traditionally been sites where food resources were scarce or not easily reached, so dominated the economy of self-sufficiency, which carried with it a task which in part are still preserved and most notably the production of the Iberian pig in a area as the Sierra.

The production is done in the Sierra de Huelva in winter, when the pork has reached an ideal weight and families are preparing to fill the pantry with all sorts of sausages and seasoned meats. It is a series of tasks spread over several days that take place in a festive atmosphere in which family ties are strengthened and neighborhood and which are marked clearly the roles of men and women within the family.
On the first day the pigs are slaughtered. Several men come to the bank pork butcher, who kills an accurate cut on the neck, while the mandinguera or chacinanta (woman in charge of sausage and spice lead the women's work) collects blood for blood sausage.
